Put the cold skin you bought into cold boiled water. -

Drain the cold water and cut into strips about 1 cm wide, and put them into a large bowl. -

Wash the cucumber and cut into shreds. -

Wash and chop the ginger, garlic and millet pepper and put them into a small bowl. -

Add half a teaspoon of salt. -

3 tablespoons rice vinegar. -

Pour the prepared sauce into a large bowl. -

Add mustard and peanuts, mix well, cover with plastic wrap and refrigerate for one hour. -

When eating, put it on a plate and sprinkle some chopped green onion or coriander for decoration.
Tips
1. Mine is cold skin bought from the market. I boil it with cold boiled water to make it cleaner.
2. Ingredients and seasonings can be adjusted according to your own preferences.
3. It will taste better if it is refrigerated for a while.
