Prepare rice noodles and pickles. -

Soak the rice noodles and drain the water. Wash the lettuce and break it into small pieces. -

Heat the pan with oil, a little more oil than usual to prevent the rice noodles from sticking together. -

Add pickles and rice noodles and turn them overFry for 1-2 minutes and the rice noodles will be cooked easily. Add light soy sauce. -

Add chopped lettuce and salt. -

Use chopsticks to pull (to prevent sticking) until the lettuce changes color, and it will be ready to serve in about 1 minute. -

A very quick staple dish. My kids don’t like spicy food, otherwise I would add chili pepper????️ for more flavor.
